A wine list should be opened, not admired from behind glass. Ours is deep in both Italy and California, and it's priced so you'll actually pull the cork — by the glass, by the bottle, and on tap under nitrogen. It's curated by Lou Dedier, who built it the way the Dedier family builds everything here: for the table, for the evening, and for whoever happens to sit down. You'll find us at 2023 Vine Street, in El Dorado Hills Town Center, minutes from Folsom.

Priced to Be Opened

We'd rather you order the second bottle than save the first one for a night that never comes. The list is priced to be enjoyed, not collected.

The range runs deep through Italy — the regions that make Roman food sing — and across California, including the dusty Paso Robles cab and the wines grown a short drive up the road in El Dorado County. By the glass or by the bottle, there's something honest at every point on the list.

Lou Dedier curates it, and the floor team is trained to steer you to the right pour rather than the expensive one. Tell them what you're eating; they'll pour to it.

Pairing the Roman Table

The city of Rome wrote the recipes; the right glass finishes them. A bright, savory red is made for the Amatriciana — spaghetti, guanciale, San Marzano, pecorino romano. The Cacio e Pepe and the Carbonara take a crisp white or a lighter red beautifully. And when the Ossobuco is on, there's a bottle on the list that was practically grown for it. Not sure? Wine Dinners

A handful of nights a year we turn the dining room into one long table for a five-course, five-pour wine dinner — most often alongside a winemaker from right up the road in El Dorado County, pouring the wine they actually grew. Dates aren't set far in advance. Write us to get on the list, or ask your server when the next one is on the calendar.

A Seat at the Bar

Come just for a glass. A handful of bar seats are kept open for walk-ins each evening — a good place to land for a pour, a board, and a slower version of the night.

We're dinner only, with doors at four-thirty. Our team has been recognized around El Dorado Hills for the wine list (2024–2025) — we're grateful, and we'd rather let the bottle speak for itself.

Can I come just for a glass of wine?

Yes. We pour by the glass and the bottle, including a nitrogen on-tap program, and a handful of bar seats are kept open for walk-ins each evening. We're dinner only, with doors at 4:30 PM.

What is the nitrogen on-tap program?

Select wines are served on tap under nitrogen, which keeps them fresh and lets us pour quality by the glass that would otherwise only come by the bottle.

Do you host wine dinners?

Yes — occasional five-course, five-pour wine dinners, often alongside El Dorado County winemakers. Dates aren't fixed in advance; write us or ask your server to be told when the next one is set.
