Vacanza Romana is a chef-driven, family-owned Roman Italian restaurant in El Dorado Hills — opened in the spring of 2023 by the Dedier family. The bones are Roman. The pantry is Californian. The pasta is rolled by hand every morning, and the room is the one you'd actually want to spend a slow evening in. You'll find us at 2023 Vine Street, at the back of El Dorado Hills Town Center, just below the movie theater.

Finding Us in Town Center

We're tucked at the back of El Dorado Hills Town Center, below the movie theater, just off U.S. Highway 50. Park anywhere in the upper or lower Theater Plaza lots and walk down — the little Italian spot under the theater is hard to miss.

It's about five minutes from Palladio in Folsom and roughly thirty minutes east of downtown Sacramento, which makes a weeknight dinner easy and a weekend one worth the short drive. Doors open at four-thirty; we serve dinner only.

The Roman Table

The city of Rome wrote the recipes, and we make them the way they're made there — not the way they got rewritten on the boat over. The four pastas Rome built anchor the card: Carbonara, with rigatoni, guanciale, egg, pecorino romano and parmigiano; Cacio e Pepe, tonnarelli with two pecorini, tellicherry pepper and a touch of white truffle butter; and Amatriciana, spaghetti with guanciale, San Marzano and pecorino romano. Gricia is Roman canon too, though its availability rotates with the season.

Beyond the pasta there's Saltimbocca alla Romana, Carciofi alla Giudia, Supplì al Telefono and Ossobuco — and a longer list of handmade pastas that turns with the season, from Bucatini e Polpette to Oxtail Ragù, Cappellacci di Zucca and Risotto ai Funghi.

Roman Carbonara

A True Scratch Kitchen

Fresh and extruded pasta, focaccia, sauces, meatballs and fennel sausage — all made in-house. The pasta is rolled by hand each morning, in the amount we can do properly.

"Nobody's grandmother ever made a second lasagna just in case. We cook the way she did — once, in the morning, in the amount we can do properly." When a dish is gone for the night, it's gone, and that's the point.

Wine, Priced to Be Opened

A deep Italian and California list, curated by Lou Dedier and priced to be opened and enjoyed, not collected. By the glass and the bottle, with a nitrogen on-tap program and the occasional five-course, five-pour wine dinner — often alongside an El Dorado County winemaker. More on the wine program.

A Room for the Evening

We hold ourselves to serious technique and refuse to act like a serious dining room — the plates are careful, the room isn't. It's a warm, candlelit place to settle in for the night, which is part of why neighbors have come to call it a favorite for a date night in El Dorado Hills. We're at 2023 Vine Street, in El Dorado Hills Town Center, at the back of the center below the movie theater — just off U.S. Highway 50.

Is there parking?

Yes. Park anywhere in the upper and lower Theater Plaza parking, steps from the door.

Do you take reservations, or can we walk in?

We take reservations through Resy and recommend booking ahead. A handful of bar seats are kept open for walk-ins each evening.

Is the pasta really made in-house?

Yes. We're a true scratch kitchen — fresh and extruded pasta, focaccia, sauces, meatballs and fennel sausage are all made in-house, with the pasta rolled by hand each morning.

How far are you from Folsom?

About five minutes from Palladio in Folsom, straight down Highway 50. More for guests coming from Folsom.
