Roman Italian Cooking in the Sacramento Region

A destination worth the drive out of the city.

Vacanza Romana isn't a downtown Sacramento restaurant — it's a reason to leave downtown for the evening. We're in El Dorado Hills, at 2023 Vine Street, about thirty minutes east of the city on U.S. Highway 50: a chef-driven, family-owned Roman Italian kitchen where the pasta is rolled by hand each morning and the farms that fill the pantry are a short drive from the dining room. For the Sacramento region, it's the kind of table you plan an evening around.

Roman at the Bones

Rome wrote the recipes, and we make them the way they're made there — not the way they got rewritten on the boat over.

The card is anchored by the pastas the city built: Carbonara — rigatoni, guanciale, egg, pecorino romano, parmigiano; Cacio e Pepe — tonnarelli, two pecorini, tellicherry pepper, white truffle butter; and Amatriciana — spaghetti, guanciale, San Marzano, pecorino romano. Gricia belongs to the Roman canon as well, and rotates onto the menu with the season.

Around them sit Saltimbocca alla Romana, Carciofi alla Giudia, Supplì al Telefono and Ossobuco, alongside a deeper bench of handmade pastas — Tagliolini alle Vongole, Agnolotti di Brasato, Oxtail Ragù and more. Read about Roman cuisine.

The Carbonara

No cream, no shortcuts — done the way it's done in Rome. More on our carbonara.

We opened in the spring of 2023 with a simple idea: feed people like a chef and treat them like neighbors. The fingerprints are Californian — the farms nearby, the dust on a bottle of Paso Robles cab, the low evening light that nobody's in a hurry to leave.
